If 'the Bible' is literally true, which Bible or collections of books is it?

How do we know which Bible is true, how do we know any of them are true? Are'n't they all imperfect copies of a supposed original that no one alive has read? Why would God write a Bible in a dead language that I do not know and expect me to take it literally?
